Ingredients
- 200 g 70% dark chocolate, chopped
- 5 eggs, separated
- 30 g caster sugar
- Pinch of salt
- 100 ml double cream, softly whipped
- Dark chocolate shavings to serve
Method

Melt chocolate over a bain-marie. Cool to body temperature.

Whisk egg yolks into the chocolate one by one.

Beat whites with salt to soft peaks, add sugar and beat to stiff peaks.

Fold one third of whites into chocolate to loosen, then fold in the remainder and the whipped cream gently. Spoon into glasses and chill 3 hours minimum.
