Ingredients
- 1 large cucumber, cut in thick chunks
- 4 ripe tomatoes, quartered
- 1 red onion, thinly sliced
- 1 green bell pepper, chopped
- 200 g block feta in brine
- 100 g Kalamata olives
- 1 tsp dried oregano
- 6 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- Salt and black pepper
Method

Combine cucumber, tomatoes, onion, pepper and olives in a large bowl.

Drizzle with oil and vinegar; season and toss gently.

Place the block of feta on top, drizzle with a little more oil and dust with oregano.

Serve immediately with crusty bread -- do not mix until at the table.
