Ingredients
- 250 g Chinese cabbage, shredded
- 2 large carrots, julienned
- 150 g edamame, shelled
- 3 spring onions, sliced
- 50 g crispy fried noodles
- 2 tbsp sesame seeds, toasted
- For dressing: 3 tbsp soy sauce, 2 tbsp sesame oil, 1 tbsp rice vinegar, 1 tbsp honey, 1 tsp freshly grated ginger, 1 garlic clove minced
Method

Toss cabbage, carrot, edamame and spring onions in a large bowl.

Whisk all dressing ingredients and adjust seasoning with more soy or vinegar.

Pour dressing over salad and toss to combine.

Top with crispy noodles and sesame seeds. Serve immediately.
