Ingredients
- 1 pre-baked 23 cm pastry shell
- 4 medium apples, peeled and sliced thinly
- 3 eggs
- 150 ml creme fraiche
- 80 g caster sugar
- 2 tbsp Calvados (or apple brandy)
- 1 tsp ground cinnamon
- 30 g butter, diced
Method

Fan apple slices overlapping in the pastry shell.

Whisk eggs, creme fraiche, sugar, Calvados and cinnamon until smooth. Pour over apples.

Dot with butter and bake at 180 C for 40-45 minutes until custard is set and apples are tender.

Cool for 20 minutes before slicing. Dust with icing sugar to serve.
