Bubble Tea au Taro

Creamy taro milk tea with chewy tapioca pearls and a hint of vanilla -- the Taiwanese cafe classic.

Ingredients

  • For pearls: 150 g tapioca starch, 100 g cooked purple sweet potato or taro, 1 tbsp sugar
  • For tea: 500 ml whole milk, 2 tbsp taro powder, 1 tbsp condensed milk, 2 tbsp strong black tea, ice

Method

Make pearls: blend taro/potato to a puree. Knead with starch and sugar to a dough. Roll into 1 cm balls. Boil 20-25 minutes until translucent; cool in sugar syrup.

Blend taro powder, milk, condensed milk and black tea until smooth and frothy.

Fill glasses with ice and pearls.

Pour taro milk tea over; add a wide straw and shake gently before drinking.
