Ingredients
- 4 rashers smoked streaky bacon
- 4 eggs
- 2 large potatoes, grated and squeezed dry for hash browns
- 1 shallot, grated
- 4 slices white sandwich bread or brioche
- Butter for eggs and toast
- Salt, pepper, ketchup and hot sauce to serve
Method

Form grated potato and shallot into 4 patties; season. Fry in oil over medium-high heat 4 minutes per side until golden and crisp.

Fry bacon in a dry pan until crisp; keep warm.

Fry eggs in butter sunny-side up or flip to over-easy. Season.

Toast bread until golden, butter while hot. Arrange everything on a warm plate.
