A hearty breakfast bowl: soft-scrambled eggs over grain, with roasted sweet potato, avocado and everything bagel spice.

Ingredients

  • 4 eggs
  • 1 sweet potato, diced and roasted
  • 1 avocado, halved
  • 150 g cooked farro or quinoa
  • 1 tsp everything bagel seasoning
  • 1 tbsp butter for eggs
  • Salt and pepper
  • Hot sauce and lemon to serve

Method

Roast sweet potato dice at 200 C for 20 minutes until caramelized.

Warm cooked grain in a pan with a splash of water; season.

Soft-scramble eggs in butter over low heat, stirring constantly, pulling off the heat while still slightly underdone.

Assemble bowls: grain base, sweet potato, eggs, avocado half. Dust with everything bagel spice; serve with hot sauce and lemon.
