Omelette Blanche aux Fines Herbes

Light egg-white omelette with a filling of sauteed mushrooms, fresh goat cheese and chervil -- elegant and clean.

Ingredients

  • 5 egg whites
  • 1 whole egg
  • 100 g button mushrooms, sliced
  • 30 g soft goat cheese, crumbled
  • 1 tbsp fresh chervil or flat-leaf parsley
  • 1 tsp butter
  • Salt and white pepper

Method

Saute mushrooms in butter until golden; season.

Whisk egg whites with the whole egg; season.

Pour into a non-stick pan over medium heat. Stir gently until barely set. Stop stirring; let base form 30 seconds.

Scatter mushrooms and goat cheese on one half. Fold and slide onto a plate. Garnish with chervil.
