Ingredients
- 5 egg whites
- 1 whole egg
- 100 g button mushrooms, sliced
- 30 g soft goat cheese, crumbled
- 1 tbsp fresh chervil or flat-leaf parsley
- 1 tsp butter
- Salt and white pepper
Method

Saute mushrooms in butter until golden; season.

Whisk egg whites with the whole egg; season.

Pour into a non-stick pan over medium heat. Stir gently until barely set. Stop stirring; let base form 30 seconds.

Scatter mushrooms and goat cheese on one half. Fold and slide onto a plate. Garnish with chervil.
